Food allergy versus food sensitivity
A food allergy is an IgE immune system response that is typically characterized by hives, shortness of breath, upset stomach and in some cases anaphylaxis. The most common food allergies are to nuts, shellfish, wheat and dairy. According to the Food Allergy & Anaphylaxis Network, only about 4% of the United States population has a food allergy.
A food sensitivity, on the other hand, is much more common than food allergies. It has been stated that 70-80% of the US population has food intolerances.

We offer two options to help you determine your food sensitivities.
The ALCAT test is a simple blood test that measures your body’s cellular response to challenges from a wide array of substances including foods, additives, colorings and chemicals.
How it Works?
Through cellular reactivity after exposure of the blood sample to the various test agents it clinically shows which substances may be causing a sensitivity-related response in the body. The Alcat Test is now considered the, “gold standard” laboratory method for identification of non-IgE mediated reactions to foods, chemicals, and other substances.
Sensitivity Elimination Protocol
The food sensitivity/guided elimination protocol is either a 5-week or a 3-week guided protocol that will support total gut health with a reintroduction phase to determine hidden food sensitivities. This is a symptoms based protocol. The goal is to help you to develop a sense of awareness to what you are eating and how makes you feel.
Over the course of the program Jessica will guide you in the process of removing the most common foods that cause reactions. Through careful evaluation and testing she will develop a customized menu plan for you. After the protocol is over there will be a reintroduction phase where the symptoms are closely monitored. This will give you an idea of what foods are triggering sensitivities in your body.
